As a sommelier and travel consultant, I have no staples wine it comes to food, literally the world is my oyster or is my cellar. There are some great matches made in heaven moments like balancing fried food with bubbles like Champagne from France and Cava from Spain the acidity and the richness of the fried food always work. However, a fruity Prosecco I would stay away from in the case of this pairing. Since currently live between Portugal and the US I often find great new styles to introduce the American market since wines from Portugal are not heavily exported. Pairings for me are mainly case by case but building an understanding of the food is more important to find the perfect wine to connect to the experience. Once you have tasted as many wines as I have, I find it boring to keep drinking the same wine with the same food, I actually prefer to try new styles or similar grapes from other wine countries.
