Clara’s Tasty Zambian Lumanda in Grounded Groundnuts

This week, Clara of Black Garlic Zambia took over the BLACK FOODIE Instagram page to give us a taste of her beloved country, Zambia! Home to more than 72 ethnic groups, this Southern African country is bursting with culture and food to appreciate and fall in love with.

First on the list is the popular vegetable Lumanda, a staple in Zambian cuisine. Native to tropical West Africa, Lumanda resembles the hibiscus plant with its reddish-green leaves and yellow flowers.

Clara shares during her takeover the two common ways Lumanda is usually prepared, either cooked in oil or garlic sauce. In her recipe, she opts to prepare her Lumanda in garlic and groundnut sauce.

To perfect this dish, Clara kindly offers her magic trick. Once you’ve added the Lumanda with the other ingredients, let the mixture boil before mixing it! This will ensure it has the right consistency.

Finally, she serves with sausages, a tomato gravy, and nshima, a must, when having Lumanda.
