Pepperoni Caprese Bites

You may be searching for a healthy recipe to bring in to a holiday gathering. These caprese bites are an incredibly easy-to-make appetizer great for any event. I was inspired by my close Ghanaian- Italian friend to try something new for once. These bites are very easy to make, and are low in calories, sodium, and fat. I used pepperoni, but salami is just as good! The basil pesto sauce ties all the flavors together. As much as I love spicy foods, I had to leave the peppers out of the sauce, when I made this for a holiday party with my colleagues. I didn’t want anybody to suffer from the habanero peppers. If you are into spicy foods like I am, you should twist it up a bit, and add your favorite peppers when making the basil pesto sauce.

This healthy appetizer can be made ahead of time, then kept in an air tight container until it is time to place on a platter. It is up to you whether you want to drizzle the pesto sauce on top or serve it on the side. Happy holidays!

Pepperoni Caprese Bites with basil pesto sauce


(22 servings)

  • 22 Mini Mozzarella Balls
  • 22 Basil Leaves
  • 22 Slices of Pepperoni
  • 22 Small Cherry Tomatoes
  • 22 Toothpicks

(Thread the mozzarella ball first then fold the pepperoni in half and half again and thread onto the toothpick.  Next add the basil leaf then the tomato- you can rearrange it however you like.)

Basil Pesto Sauce

  • 1/3 Cup Olive Oil
  • ½ c water
  • 1 scallion, minced
  • ¼ teaspoon garlic Powder
  • 6 Basil leaves, chopped fine
  • Pepper and salt to taste

Put all ingredients into a small saucepan, then boil for 7 minutes. Take off stove top. Let sit for 30 minutes to cool down while flavors develop. Enjoy!
