Crystal’s Maple Bourbon Wings

For the Fried Chicken episode of the BLACK FOODIE Battle, Crystal introduced us to her no-fail Maple Bourbon wings. Try them this weekend with your favourite side!

Ingredients

 2 lbs Chicken wings
 1 tbsp Garlic powder
 2 tbsp Salt (or less)
 1 tbsp Black pepper
 1 tbsp Unsalted butter
 1 tbsp Grated onion
 2 tbsp Tomato paste
 ½ cup Bourbon
 ¾ cup Maple syrup
 1 tsp Dried rosemary

Directions

Pat the wings dry, and coat with garlic powder. Let it sit for 15-20 min.

While the chicken marinates, melt the butter in a saucepan over medium low heat, then add the onions to saute for 1 minute.

Add tomato paste, and cook for another minute, letting the paste get a little caramelized.

Pour the maple syrup and bourbon into the pot, then whisk to help break up the tomato paste.

Add the rosemary, and continue to cook on medium low heat for 5-6 minutes. Remove from heat.

Season chicken with salt and pepper, then deep fry until cooked thoroughly. Drain the chicken on paper towels, then put them into a mixing bowl.

Pour the maple-bourbon glaze on the chicken, and mix with a large spoon. Enjoy!
