Guinness Glazed-Ribs

These short ribs are braised with Guinness and then covered in a sticky-sweet Guinness-based BBQ sauce that leaves your taste buds tingling. Don't forget to top these ribs with pickled red onions and habaneros for an extra punch of tangy spice.

Ingredients

For the Ribs
 8 qts Beef stock
 1 cup Tomato paste
 2 Cans of Guinness Draught
 2 cups Green seasoning
For the Glaze
 1 cup Brown sugar
 1 tbsp Paprika
 1 tbsp Oregano
 2 cups Soy sauce
 1 Scotch bonnet pepper
 1 White onion, chopped
 4 Cloves of garlic
 6 Bone-in short ribs
 2 tbsp Canola oil
 Salt and pepper to taste
 Your favourite chili pepeprs

Directions

To make the ribs

Preheat BBQ grill to 450°F.

Season short ribs generously with salt, pepper, paprika, oregano.

Grill the ribs for 5 mins on each side then transfer to a roasting pan.

Preheat oven to 350°F.

Add green seasoning, beef stock, and two bottles of Guinness Draught to the roasting pan, making sure ribs are fully covered.

Cover roasting pan with oven-safe plastic wrap and then aluminum foil.

Place into preheated oven and braise for 2–2.5 hours.

To make the BBQ sauce glaze

In a sauce pan, heat up a couple tablespoons of canola oil.

Add white onion and sauté.

Add tomato paste and mix well.

Add brown sugar and soy sauce to the pan, and cook until well mixed.

Deglaze with 2 bottles of Guinness Draught and mix well.

Simmer for 10 mins then transfer the sauce to a blender.

Return the blended sauce to the sauce pan and continue simmering it for 10 mins.

Assemble the dish by removing the ribs from the oven and glazing them with the BBQ sauce. 

Garnish them with fresh herbs and sliced chilies and serve immediately.
