With chilly mornings among us, the last thing I want to eat after I wake up from a warm bed is a bowl of cold cereal.
I desperately needsomething hearty to get me through my morning (along with nearly an entire pot of coffee, but that’s a different story). So, in searching for something a little more filling, I played around in the kitchen with ingredients that I already had on hand and came up with this oatmeal recipe. Not only is it yummy, but it can also be prepared ahead of time which is a win-win in my book.
So exactly what is a ‘Harvest Oatmeal’? Well to make it very simple, it's an old-fashioned oatmeal recipe mixed with a mashed sweet potato, an assortment of spices, and topped with rosemary brown sugar walnuts. The combination reminds me so much of autumn and Thanksgiving thanks to the warming spices in this dish, so I decided to call it Harvest Oatmeal.

Peel and cube the sweet potato. Add the cubes to lightly salted boiling water and cook them until tender.
In a bowl, mash the sweet potato with a masher or fork.
In a separate pot, prepare the oatmeal.
Boil the milk (or water!) and stir in oats, cooking them for about 5 minutes over medium heat. Stir occasionally until the oats are soft.
Mix the mashed sweet potato and cooked oatmeal together well. Mix in the brown sugar, cinnamon, and nutmeg and then fold in the raisins and chia seeds.
Top the oatmeal with the rosemary brown sugar walnuts or your favorite roasted nuts!
