Lumanda in Pounded Groundnuts

A popular vegetable in Zambia, so much so that it is sung about in songs, Lumanda is often enjoyed with groundnuts, which pairs nicely with its interesting sour taste. Below is how I love to prepare it.

Ingredients

 1 Lumanda (Hibiscus Sabriffa)
 2 Tomatoes
 1 Onion
 1 tsp Cooking soda (baking soda can be used as an alternative)
 Salt
 2 Fresh Chillies
 3 cups Groundnut paste (3 cups of pounded groundnuts mixed with one cup of water

Directions

Bring water to a boil.

Add soda and salt.

Add lumanda and let it cook for 5 minutes. Drain water.

Add tomato, onion, and groundnut paste. Allow mixture to cook for 5 minutes without stirring.

Stir the vegetables. Add chillies and simmer for another 5 minutes. Serve.
