Peach cobbler is one of my all-time favourite desserts! It's fruity, sweet, and that spiced, golden crust gets me every time. This recipe is unique because the peach filling is poured on top of the batter which then bakes up to cover the peaches and bring the whole dessert together.
If you can get your hands on Tillamook ice cream, I strongly recommend you enjoy a slice of this cobbler with a scoop of their Vanilla Bean or Peaches & Cream flavour. It's SO good.

Preheat your oven to 375 degrees F.
Combine 1 cup white sugar with the flour, baking powder, salt.
Whisk till evenly combined then stir in milk until a smooth batter is formed.
Set aside.
In a saucepan over medium heat, combine the peach slices with brown sugar and remaining ½ cup of white sugar, lemon juice, cinnamon, nutmeg, and a tbsp of butter.
Cook down until the mixture thickens, about 10-15 minutes.
In the meantime, place the remaining cubes of butter on baking dish and place in oven to melt.
Remove once butter has melted evenly.
Pour the batter mixture onto the heated baking dish over the melted butter, and then pour the peach mixture on top.
Place the cobbler in the oven for 35- 40 minutes or until the crust is golden brown and bubbling.
Once fully baked, removed the cobbler from the oven and allow it to cool slightly before cutting it into squares.
Serve each portion warm, with a scoop of Tillamook Vanilla or Peaches & Cream ice cream.
