Bite-Sized Pineapple Upside Down Cakes

Growing up, I always loved Sunday dinner with my family. It was so much fun to have everyone over after church, watch sports all day, and throw down on all kind delicious food.

While the main dishes were tasty, the desserts were even better because my aunt was one of the best bakers I have ever known. Anything you wanted, she would make just for you. Apple pie, sweet potato pie, cream cheese pound cake, 7up cake, and chocolate chip cookies were some of my most-requested desserts. She was amazing! You could feel her love in every chocolate chip morsel and slice of pie.

I’ve developed my aunt’s love for baking and it has been such fun, weight-gaining experience. I really enjoy watching friends eat my food and one of my favorite recipes to share with them are my mini pineapple upside-down cakes. These cakes are the perfect size for holiday parties, tailgating, kids’ events, and more.

Hearty Sweet Potato Oatmeal

With chilly mornings among us, the last thing I want to eat after I wake up from a warm bed is a bowl of cold cereal.

I desperately needsomething hearty to get me through my morning (along with nearly an entire pot of coffee, but that’s a different story). So, in searching for something a little more filling, I played around in the kitchen with ingredients that I already had on hand and came up with this oatmeal recipe. Not only is it yummy, but it can also be prepared ahead of time which is a win-win in my book.

So exactly what is a ‘Harvest Oatmeal’? Well to make it very simple, it’s an old-fashioned oatmeal recipe mixed with a mashed sweet potato, an assortment of spices, and topped with rosemary brown sugar walnuts. The combination reminds me so much of autumn and Thanksgiving thanks to the warming spices in this dish, so I decided to call it Harvest Oatmeal.

The ways of making coconut oil were taught to my mother by my grandmother and were then taught to me by her. As we shared laughter over our busy hands, my mom told me about how my grandmother used to sit on the back step and crack up to 100 coconuts to make oil. It was storytelling in motion. Within this recipe that I am sharing below with you resides generations bonded over a traditional, painstaking, but ultimately satisfying labour of love.

I have added to a few of the steps a shortcut, often an easier, quicker, and sometimes safer way to the more traditional method. Also, be aware that not all coconuts are created the same! Some naturally yield more oil than others. My mom and I usually use three coconuts, and it yielded roughly a ⅓ cup of coconut oil.
